How to make Clarified Butter
Clarified butter is made by removing all milk solids from
butter. The result is a translucent, golden butter that withstands higher
temperatures without burning. It's typically made by melting butter and letting
the components separate. The water evaporates, whey proteins rise to the top
and are removed, and the remaining milk solids (casein) settle at the bottom.
The clear butterfat that remains on top is then poured off, which is the
clarified butter.
